Chicken with Ginger Sauce

1 whole chicken (cut into 2 inch pieces)
3 scallions or cup chopped onions
1 teaspoon coriander seed
salt & pepper to taste
2 tablespoons flour
8 ounces coconut milk
2 tablespoons butter

Ginger Sauce

2 cups hot water
2 red chilies, unseeded and minced
teaspoon salt
1 tablespoon vinegar
cup java sugar( made by mixing cup molasses with 1 cup brown sugar)
1 teaspoon ginger
2 tablespoon flour

Boil chicken in salted water until done. Set aside. In bowl combine coriander, salt, pepper, flour, and coconut milk. Dip chicken in this mixture then saute in wok with butter until golden brown.

To prepare ginger sauce:

Bring water to a boil. Add chilies, salt, vinegar, java sugar and ginger. Let simmer a few minutes. Make a flour paste by adding enough water to 2 tablespoons of flour. Add flour paste and let simmer a few more minutes. Pour ginger sauce into a separate bowl and keep warm. Allow guests to add their own sauce.
