Zucchini and Sweet Onion Brochettes3 tablespoons olive oil
3 tablespoons tomato paste
3 tablespoons chopped fresh rosemary
1 tablespoon brown sugar
24 small onions, peeled
6 zucchini, each cut into 4 pieces
Blend together oil, tomato paste, rosemary and sugar. Put the onions and zucchini in a large plastic food bag and add the tomato mixture. Shake bag to coat vegetables. Leave in bag until ready to cook.
Thread vegetables unto skewers. Cook over medium-high heat for 15 minutes turning occasionally until slightly blackened and just cooked through. Serves 6.
