Beef Paprika

  • 2 tablespoon olive oil

  • 1 pound beef sirloin steak, thinly sliced

  • 1 cup thinly sliced onion

  • 1 cup thinly sliced red bell pepper

  • 1 cup canned beef broth

  • 3 cloves garlic, finely chopped

  • 1 tablespoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 cup light sour cream

  • 2 tablespoons fresh parsley

  • Heat 1 tablespoon oil in large frypan over medium heat. Add beef and stir fry until browned on both sides. Transfer beef to plate and keep warm.

    Add remaining oil in pan with onion and red pepper. Saute until tender, about 5 minutes. Stir in broth, paprika, salt and pepper. Bring to a boil. Reduce and simmer uncovered for an additional 5 minutes. Return beef and accumulated juices to frypan. Stir in sour cream and cook for 1 minute or until heated through. Do not boil. Sprinkle with parsley. Serves 4.
